Benzoic acid and its sodium salts (sodium benzoate) are commonly used food preservatives, with the strongest anti-corrosion performance under acidic conditions and the ability to inhibit the growth of fungi, bacteria, and molds.
It is used in the production of pharmaceuticals, dye carriers, plasticizers, spices, and food preservatives, as well as for improving the performance of alkyd resin coatings; Used as an intermediate in pharmaceuticals and dyes, used in the production of plasticizers and fragrances, and also as a rust inhibitor for steel equipment.
1, preservative: molecular benzoic acid has a strong antibacterial effect, so the antibacterial effect is good in acidic solution, the optimal pH is 4, with the increase of solution pH, the degree of dissociation increases, the anti-corrosion effect decreases. The preservative effect of benzoic acid is weaker than that of hydroxyphenyl ester, but the anti-fermentation effect is stronger than that of hydroxyphenyl ester. The combination is ideal for preventing fermentation and mildew, especially for liquid preparations. The antiseptic mechanism of sodium benzoate was the same as that of Benzoic acid, and the antiseptic effect of sodium benzoate 1.18g was similar to that of Benzoic acid 1.0g.
